Belarusian Potato Pancakes with Minced Meat

1Potato Pancakes In a large bowl, mix grated potatoes (6 medium) with grated onion (1). Drain excess liquid by squeezing the mixture in a clean kitchen towel.

2Add eggs (2), flour, salt (1 teaspoon), and black pepper (½ teaspoon) to the potato mixture. Mix well until combined.

3Heat oil (2 tablespoons) in a skillet over medium heat. Spoon potato mixture into the skillet, forming pancakes. Flatten gently with a spatula and cook until golden brown on both sides. Repeat until all the mixture is used, adding more oil (2 tablespoons) as needed. Keep pancakes warm while preparing the filling.

4Minced Meat (300 g) Filling In a separate pan, heat oil (2 tablespoons) over medium heat. Add chopped onions and cook until translucent.

5Add minced garlic, minced (2 cloves) meat, paprika (½ teaspoon), cumin (½ teaspoon), salt (1 teaspoon), and pepper. Cook until the meat is browned and fully cooked, stirring occasionally.

6Assembling Place a spoonful of the minced meat (300 g) filling onto half of a potato pancake. Fold the pancake over the filling to create a half-moon shape. Repeat for the remaining pancakes.

7Serve the Belarusian potato pancakes with minced meat (300 g) hot, garnished with fresh herbs or sour cream if desired.
