Crab with Cheese and Sweet Potatoes

1Preparation Preheat the oven to 375°F (190°C) and grease a baking dish with cooking spray.

2Preparing the Crab Mixture In a bowl, combine the crab meat, breadcrumbs, Parmesan cheese, mayonnaise, Dijon mustard, lemon juice, garlic powder (1 teaspoon), paprika, salt, and pepper. Mix well to combine.

3Making the Cheese Sauce In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 2 minutes to make a roux. Slowly whisk in the milk until smooth. Add the cheddar cheese and stir until melted. Season with salt and pepper. Remove from heat and set aside.

4Roasting the Sweet Potatoes (2 large) Peel and cut the sweet potatoes (2 large) into cubes. Place them on a baking sheet, drizzle with olive oil (2 tablespoons), and sprinkle with smoked paprika (1 teaspoon), garlic powder (1 teaspoon), salt, and pepper. Toss to coat evenly. Bake in the preheated oven for 25-30 minutes or until tender and slightly crispy.

5Assembling and Baking the Dish Fill a baking dish with the prepared crab mixture. Top with the cheese sauce. Arrange the roasted sweet potatoes (2 large) around the crab and cheese. Bake in the oven for 20-25 minutes or until bubbly and golden brown.
