Date Chicken

Here's the recipe for what is called "Date Chicken". Derived from the 'ol days when I knew I could make this dinner for any date and they would like it. My recipe is very old and the amounts are rough estimates. It's pretty hard to mess up this recipe so feel free to add your own touch. I always use extra cheese and mushrooms. I always use a whole box of the stuffing mix, never looked to see if it was 2 cups or more. It is really important to keep all stuffing moistened. I tend to check the stuffing every couple of minutes, then spoon sauce over the top or pour more melted butter if needed.
