Berry Cheesecake Delight

Preparing the Crust 1. Preheat the oven to 325°F (165°C). Grease a 9-inch springform pan with cooking spray.

2.In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until the mixture resembles wet sand.

3.Press the crust mixture firmly into the bottom of the prepared springform pan. Use the back of a spoon to smooth the surface.

Making the Filling 1. In a large bowl, beat the cream cheese and sugar together until smooth and creamy.

5.2. Add the vanilla extract and eggs, one at a time, mixing well after each addition.

6.3. Gently fold in the Pepsi, diced strawberries, and blueberries until well combined.

7.4. Pour the filling over the crust in the pan, spreading it evenly.

Baking the Cheesecake 1. Place the cheesecake in the preheated oven and bake for 50-60 minutes, or until the center is set but slightly wobbly.

9.2. Remove the cheesecake from the oven and let it cool slightly while preparing the topping.

Preparing the Topping 1. In a small bowl, mix the sour cream, sugar, and vanilla extract until smooth.

11.2. Spread the sour cream mixture over the top of the cheesecake.

12.3. Return the cheesecake to the oven and bake for an additional 10 minutes.

Chilling and Serving 1. Allow the cheesecake to cool completely at room temperature, then refrigerate for at least 4 hours or overnight.
