Rustic Mixed Berry Bisquick Pie

1For the filling Combine the mixed berries (4 cups), granulated sugar (1 cup), cornstarch (¼ cup), lemon juice (1 tablespoon), and vanilla extract (1 teaspoon) in a large bowl. Gently toss until the berries are evenly coated with the sugar and cornstarch (¼ cup) mixture. Let it sit for about 15 minutes to allow the berries to release their juices and the sugar to dissolve.

2For the crust In a medium bowl, mix together the Bisquick mix (2 cups), milk (½ cup), and melted butter until a soft dough forms. On a lightly floured surface, knead the dough a few times until smooth. Then, press the dough into the bottom and up the sides of a 9-inch pie dish, creating a rustic, fluted edge.

3Assembling the pie Preheat the oven to 375 degrees Fahrenheit (190 degrees Celsius). Spoon the berry filling into the prepared Bisquick crust. If desired, create a lattice top with extra Bisquick dough or leave as is for a more rustic appearance.

4Baking the pie Bake in the preheated oven for 45-50 minutes, or until the berry filling is bubbly and the crust is golden brown. If the edges of the crust begin to brown too quickly, cover them with aluminum foil.
