Sweet Carrot Delight

Peel and grate the carrots (4 large). Preheat the oven to 350°F (175°C) and grease a baking dish.

In a mixing bowl, cream together the sugar and butter until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

Sift together the flour, baking powder, cinnamon, nutmeg, and salt. Gradually add the dry ingredients to the wet mixture, stirring until well combined.

Fold in the grated carrots (4 large), chopped walnuts, and raisins (if using) until evenly distributed in the batter.

Pour the batter into the prepared baking dish and smooth the top. Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

Allow the dessert to cool slightly before serving. Enjoy this sweet carrot delight on its own or with a dollop of whipped cream or a scoop of vanilla ice cream!
