Cheesy Bell Pepper Boats

1.Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.

2.In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.

3.Cut the tops off the mini bell peppers and remove the seeds and membranes to create boat-like shapes.

4.In a bowl, combine the cooked ground beef, diced onion, and sour cream. Mix well.

5.Fill each mini bell pepper with the ground beef mixture and place them on the prepared baking sheet.

6.Sprinkle shredded cheddar cheese over the filled bell peppers.

7.Bake in the preheated oven for 20-25 minutes or until the peppers are tender and the cheese is melted and bubbly.

8.Serve the cheesy bell pepper boats hot and enjoy!
