Savory Carrot Fritters

1Combine grated carrots (2 cups), chopped onion (½ cup), flour, cornstarch (⅓ cup), baking powder (1 teaspoon), cumin (1 teaspoon), paprika (1 teaspoon), salt (½ teaspoon), and black pepper (¼ teaspoon) in a bowl. Mix well.

2In a separate bowl, whisk together the beaten eggs (2) and chopped parsley.

3Add the egg mixture to the carrot mixture and stir until everything is well combined.

4Heat oil in a frying pan over medium heat.

5Scoop spoonfuls of the carrot batter into the hot oil, flattening them slightly with the back of the spoon.

6Fry the fritters for 3-4 minutes on each side or until golden brown and crispy.

7Remove the fritters from the pan and place them on a paper towel-lined plate to drain excess oil.

8Serve the savory carrot fritters hot with your favorite dipping sauce or enjoy them as they are!
