Savory Potato and Egg Skillet

1.Peel and dice the potatoes into small cubes.

2.Chop the onion and bell pepper.

3.In a large skillet, heat some oil over medium heat.

4.Add the diced potatoes to the skillet and cook until golden and crispy, stirring occasionally, for about 10-12 minutes.

5.Push the potatoes to one side of the skillet and add the chopped onion and bell pepper to the other side. Cook until softened, about 3-4 minutes.

6.Beat the eggs in a bowl and pour them over the potatoes, onion, and bell pepper.

7.Stir gently to combine everything in the skillet and cook until the eggs are set, about 3-4 minutes.

8.Sprinkle shredded cheddar cheese on top and cover the skillet until the cheese melts, about 1-2 minutes.

9.Garnish with chopped parsley before serving.
