Flavorful Tomato Rice

1.Wash 2 cups of rice thoroughly and soak in water for 15-20 minutes.

2.Finely chop 1 onion, mince 3 cloves of garlic, and dice 2 tomatoes.

3.In a large pot, heat some oil over medium heat.

4.Add the chopped onion and minced garlic to the pot. Saute until they turn translucent and aromatic, about 3-4 minutes.

5.Stir in the diced tomatoes and cook until they soften and release their juices, about 4-5 minutes.

6.Drain the soaked rice and add it to the pot. Stir well to mix the rice with the tomato mixture.

7.Add enough water to cook the rice (approximately 4 cups) and season with salt and pepper to taste.

8.Bring the mixture to a boil, then reduce the heat to low, cover the pot with a lid, and let it simmer for 15-20 minutes or until the rice is cooked through and fluffy.

9.Once the rice is cooked, fluff it with a fork and serve hot as a flavorful side dish or a main course.
