Cheesy Chicken and Bacon Casserole

1.Preheat the oven to 375°F (190°C).

2.Cook pasta or rice according to package instructions, then set aside.

3.Cook the bacon in a pan until crispy, then crumble it into pieces and set aside.

4.In a mixing bowl, combine cottage cheese, sour cream, eggs, and ranch seasoning. Mix well.

5.In a separate bowl, blend bisquick mix with shredded cheese.

6.Dice the golden potatoes into small cubes.

7.Heat olive oil in a large skillet over medium heat. Add diced potatoes and onions. Cook until golden brown and tender, then remove from heat.

8.Season the chicken breasts with an assortment of seasoning.

9.In the same skillet, cook the seasoned chicken breasts until golden brown on both sides. Remove from heat and dice into bite-sized pieces.

10.In a large baking dish, layer the cooked pasta or rice, chicken pieces, bacon, and potato-onion mixture.

11.Pour the cottage cheese mixture over the layers in the baking dish. Sprinkle the bisquick-cheese blend on top.

12.Bake in the preheated oven for 25-30 minutes, or until the casserole is golden brown and bubbly.
