Savory Baked Potato Tomato Casserole

1Preheat the oven to 375°F (190°C) and grease a baking dish with olive oil (¼ cup).

2Peel and thinly slice the potatoes (4 large), tomatoes (4 medium), and onion (1). Mince the garlic (2 cloves) cloves and set aside.

3Layer half of the sliced potatoes (4 large) in the bottom of the baking dish, followed by a layer of half of the sliced tomatoes (4 medium) and onions. Sprinkle half of the minced garlic (2 cloves) over the vegetables.

4Drizzle half of the olive oil (¼ cup) over the vegetables and season with half of the oregano, paprika (1 teaspoon), black pepper (½ teaspoon), and chili flakes (½ teaspoon). Top with half of the grated Parmesan cheese (½ cup) and parsley. Repeat the layers with the remaining vegetables and seasonings.

5Cover the baking dish with aluminum foil and bake for 30 minutes.

6Remove the foil, sprinkle breadcrumbs (1 cup) over the top, and bake uncovered for an additional 15 minutes or until the potatoes (4 large) are tender and the top is golden brown.
