Colorful Veggie Rice Bowl

1Wash and rinse 1 cup of rice (1 cup) thoroughly. Cook the rice (1 cup) according to package instructions and set it aside.

2In a pan, heat some oil over medium heat. Add the diced capsicum (1) and grated carrot (1). Sauté for 5-6 minutes until the vegetables are slightly tender.

3Add the cooked rice (1 cup) to the pan with the sautéed capsicum (1) and carrot (1). Mix well to combine all the ingredients.

4Toss in the chopped fresh mint leaves (¼ cup) and stir to distribute the mint flavor throughout the rice (1 cup).

5Cook the mixture for an additional 2-3 minutes to allow the flavors to meld together.

6Season with salt and pepper to taste, and adjust the seasoning if necessary.

7Remove from heat and serve the colorful veggie rice (1 cup) bowl hot, garnished with extra mint leaves if desired.
