Rainbow Chicken Skewers with Sweet Tomato Sauce

Cut the cherry tomatoes, red onion, mini bell peppers, and blue grapes into small, bite-sized pieces.

Cut the chicken thigh fillets into small cubes.

Thread the cherry tomatoes, red onion, mini bell peppers, blue grapes, and chicken cubes onto skewers in a colorful pattern, alternating ingredients.

Preheat a grill or grill pan over medium heat.

Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and the vegetables are charred slightly.

While the skewers are cooking, prepare the sweet tomato sauce by blending a mixture of cherry tomatoes, red onion, mini bell peppers, and blue grapes until smooth.

Pour the blended mixture into a saucepan, bring it to a simmer over medium heat, and cook for 5-7 minutes until the sauce thickens slightly.

Serve the rainbow chicken skewers with the sweet tomato sauce on the side or drizzled over the skewers.

Enjoy your colorful and delicious meal!
