Spicy Aloo Baingan Curry

1Heat oil in a pan over medium heat and add cumin seeds (1 teaspoon) and black mustard seeds (½ teaspoon). Let them splutter for a few seconds.

2Add the chopped onions, minced garlic (3 cloves), grated ginger, and green chili (1). Saute until the onions are translucent and fragrant.

3Add the diced tomatoes (2) and cook until they are soft and mushy, stirring occasionally.

4Stir in the turmeric powder (1 teaspoon), coriander powder (1 teaspoon), cumin powder (½ teaspoon), red chili powder (½ teaspoon), and garam masala (1 teaspoon). Cook for a minute to release the flavors of the spices.

5Add the cubed potatoes (2 large) and sliced eggplants (2 small). Mix well to coat them with the spice mixture. Cover and cook for about 15-20 minutes, stirring occasionally, until the vegetables are tender and cooked through.

6Garnish with fresh cilantro and serve hot with rice or bread.
