Spicy Potato and Onion Roast

1Preheat the oven to 400°F (200°C).

2Peel the potatoes (2 lbs) and cut them into bite-sized cubes. Slice the onions (2 large) into thin wedges.

3In a large bowl, combine the potatoes (2 lbs), onions (2 large), paprika (2 tsp), cumin (1 tsp), chili powder (½ tsp), garlic powder (½ tsp), onion powder (½ tsp), turmeric (½ tsp), and cayenne pepper (¼ tsp). Mix well to coat the vegetables evenly with the spices.

4Drizzle a baking dish with oil and transfer the spiced potatoes (2 lbs) and onions (2 large) mixture into the dish, spreading it out into an even layer.

5Roast in the preheated oven for 30-35 minutes or until the potatoes (2 lbs) are tender and slightly crispy, stirring once halfway through to ensure even cooking.

6Once cooked, remove from the oven and garnish with fresh cilantro.
