Easter Caponata

1Begin by preparing the eggplant (1 large). Sprinkle diced eggplant (1 large) with salt and let it sit in a colander to draw out excess moisture for about 20 minutes. Rinse and pat dry with paper towels.

2In a large pot, heat olive oil over medium heat. Add the eggplant (1 large) and sauté until lightly browned. Remove from pot and set aside.

3In the same pot, add more olive oil if needed. Sauté the celery, bell peppers, onion (1 large), and garlic (3 cloves) until softened, about 5-7 minutes.

4Return the eggplant (1 large) to the pot. Stir in olives, capers (¼ cup), raisins (⅓ cup), pine nuts (¼ cup), white wine vinegar (⅓ cup), and sugar (2 tablespoons). Cook for 2 minutes.

5Add the diced tomatoes, basil, and parsley. Cover the pot and simmer for 20-25 minutes, stirring occasionally.

6Taste and adjust seasoning as needed. If it's too acidic, add a bit more sugar (2 tablespoons). If too sweet, add a splash of vinegar.

7Serve the Caponata di Pasqua warm or at room temperature. It can be enjoyed on its own or with crusty bread or grilled meats.
