Birthday Risotto

1.In a large saucepan, heat the broth over medium heat. Keep it warm but not boiling.

2.In a separate large pan, melt 1/4 cup of butter over medium heat. Add the chopped onions and minced garlic. Cook until the onions are translucent, about 3-4 minutes.

3.Add the Arborio rice to the onion mixture and stir well to coat the rice with butter. Cook for about 2 minutes until the rice starts to become translucent at the edges.

4.Pour in the white wine and cook until the wine is absorbed, stirring constantly.

5.Begin adding the warm broth to the rice, one ladleful at a time. Stir continuously and wait for the liquid to be absorbed before adding more broth. Continue this process until the rice is cooked al dente, about 18-20 minutes.

6.In a separate pan, melt the remaining butter and sauté the mushrooms until golden brown. Add the cooked chicken and let it heat through.

7.Once the risotto is cooked, stir in the grated Parmesan cheese, heavy cream, mushroom-chicken mixture, and chopped parsley. Season with salt and pepper to taste.

8.Remove the risotto from heat and let it rest for a few minutes before serving. Garnish with extra Parmesan cheese and parsley.

9.Serve the birthday risotto hot and enjoy the creamy and flavorful dish with your loved ones.
