Elegant Wedding Style Chicken Biryani

1.Wash the basmati rice until the water runs clear and soak it for 30 minutes. Marinate the chicken with yogurt, ginger-garlic paste, biryani masala, red chili powder, turmeric powder, and salt for at least 1 hour.

2.In a large pot, heat ghee and vegetable oil. Add the whole spices - cinnamon stick, cardamom pods, cloves, and bay leaf. Saute until fragrant.

3.Add the sliced onions and cook until they turn golden brown. Add the marinated chicken and cook until it changes color.

4.Layer half of the cooked chicken at the bottom of the pot. Top it with half of the soaked rice. Sprinkle half of the chopped coriander and mint leaves, diced tomatoes, green chilies, and fried onions.

5.Repeat the layering process with the remaining chicken, rice, coriander, mint, tomatoes, green chilies, and fried onions. Pour warm milk mixed with saffron on top.

6.Cover the pot with a tight-fitting lid and cook on low heat for 30-35 minutes or until the rice is fully cooked and the chicken is tender.
