Festive St. Joseph's Garden Pickle

1.In a large bowl, combine cauliflower, carrot sticks, green beans, celery, red and yellow bell peppers, pearl onions, green olives, and pepperoncini.

2.In a medium saucepan, mix vinegar, water, sugar, garlic, mustard seeds, fennel seeds, oregano, and red pepper flakes. Bring to a boil over medium heat, stirring occasionally.

3.Reduce heat and simmer the brine mixture for 5 minutes, allowing the flavors to meld together.

4.Carefully pour the hot brine over the prepared vegetables in the bowl. Toss gently to coat all the vegetables with the brine. Let cool to room temperature.

5.Transfer the vegetable mixture and brine to a large airtight container. Seal the container and refrigerate for at least 24 hours before serving, allowing the flavors to develop fully.
