Birthday Coffee Cake

1.Preheat the oven to 350°F (180°C) and grease a 9-inch round cake pan.

2.In a mixing bowl, cream together the softened butter and sugar until light and fluffy.

3.Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

4.In a separate bowl, whisk together the flour, baking powder, baking soda, and ground cinnamon.

5.Alternate adding the flour mixture and the buttermilk to the wet ingredients, beginning and ending with the flour mixture. Mix until just combined.

6.Stir in the brewed coffee until incorporated into the batter.

7.Pour the batter into the prepared cake pan.

8.To make the crumb topping, mix together the flour, brown sugar, melted butter, and cinnamon until crumbly.

9.Sprinkle the crumb topping evenly over the cake batter in the pan.

10.Bake in the preheated oven for 40-45 minutes or until a toothpick inserted into the center comes out clean.

11.Allow the cake to cool in the pan for 15 minutes before transferring to a wire rack to cool completely.
