Creamy Mashed Potatoes

1Peel the Yukon Gold potatoes (2 pounds) and cut them into chunks.

2Place the potato chunks in a large pot and cover them with cold water. Add a pinch of salt to the water.

3Bring the water to a boil over high heat, then reduce the heat to medium-low and simmer for about 15-20 minutes, or until the potatoes are fork-tender.

4Drain the potatoes and return them to the pot.

5Add the heavy cream (½ cup), unsalted butter (¼ cup), sour cream (¼ cup), and grated Parmesan cheese (½ cup) to the pot with the potatoes.

6Use a potato masher or a hand mixer to mash the potatoes until smooth and creamy. Season with salt and pepper to taste.

7Transfer the mashed potatoes to a serving dish and garnish with fresh chives before serving.
