Cheesy Beef and Chicken Casserole

1Preheat the oven to 375°F (190°C).

2In a large skillet, heat some oil over medium heat.

3Add minced garlic (2 cloves) and diced onion (1) to the skillet. Cook until the onion (1) is translucent and the garlic is fragrant.

4Add the chicken (1 pound) pieces to the skillet and cook until they are no longer pink.

5In a separate pot, cook the rice (1 cup) according to package instructions.

6In a mixing bowl, whisk together the eggs (2), milk (1 cup), and beef broth (1 pound).

7Add the cooked rice (1 cup), chicken (1 pound), tater tots (2 cups), and soy sauce (2 tablespoons) to the egg mixture. Mix well to combine everything evenly.

8Pour the mixture into a greased baking dish.

9Top the casserole with shredded cheddar cheese (1 cup) and dot with butter (¼ cup) pieces.

10Cover the baking dish with foil and bake for 30 minutes.

11Remove the foil and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.

12Serve the cheesy beef and chicken (1 pound) casserole hot, garnished with fresh herbs if desired.
