Savory Meatball Rice Bowl

1Cook the rice (2 cups) according to package instructions.

2In a large skillet, heat 1 tablespoon of cooking oil (2 tbsp) over medium heat.

3Add the meatballs (1 lb) to the skillet and cook until browned on all sides, about 8-10 minutes.

4Remove the meatballs (1 lb) from the skillet and set aside.

5In the same skillet, add the remaining tablespoon of cooking oil (2 tbsp).

6Crack the eggs (4) into the skillet and cook to your desired doneness, either scrambled or fried.

7Once the eggs (4) are cooked, remove them from the skillet and set aside.

8To assemble the rice (2 cups) bowl, divide the cooked rice (2 cups) among serving bowls.

9Top the rice (2 cups) with the cooked meatballs (1 lb) and eggs (4).
