Christmas Dodol

1In a large pan, combine coconut milk (1 cup), palm sugar (1 cup), and water (½ cup). Heat over low heat until the sugar is dissolved, stirring occasionally.

2Add the glutinous rice flour (2 cups) to the pan and stir continuously until the mixture thickens and forms a dough-like consistency.

3Add butter (¼ cup) and condensed milk (¼ cup) to the dough and mix well until fully incorporated.

4Stir in the grated coconut (½ cup), raisins (¼ cup), almonds, cashew nuts, pistachios, dried cranberries, dried apricots, dried figs, dates, candied orange peel, candied ginger, candied cherries, and candied pineapple. Mix until all ingredients are evenly distributed in the dough.

5Continue cooking the mixture over low heat, stirring constantly, until it becomes thick and sticky, resembling a thick caramel consistency. This may take about 30-40 minutes, so be patient and keep stirring to prevent burning.

6Once the dodol mixture is thick and sticky, remove it from the heat and let it cool slightly.

7Grease a square baking dish with butter (¼ cup) and transfer the dodol mixture into the dish, spreading it evenly with a spatula.

8Allow the dodol to cool completely and set at room temperature for a few hours or refrigerate for faster setting.

9Once the dodol is set, cut it into small squares or diamond shapes.

10Serve the Christmas dodol as a festive treat or gift it to friends and family during the holiday season!
