Christmas Nankathis

1In a mixing bowl, combine all-purpose flour (2 cups), semolina (½ cup), powdered sugar (1 cup), chopped nuts (¼ cup), cardamom powder (¼ tsp), nutmeg powder (¼ tsp), and saffron strands (¼ tsp).

2Add ghee (1 cup) to the dry ingredients and mix well to form a crumbly mixture.

3In a small bowl, mix milk (¼ cup) and water (¼ cup). Dissolve baking soda (¼ tsp) in this mixture.

4Gradually add the milk (¼ cup)-water (¼ cup) mixture to the dry ingredients and knead to form a smooth dough.

5Cover the dough and let it rest for 30 minutes.

6Preheat the oven to 350°F (180°C).

7Divide the dough into small portions and shape them into round cookies or desired shapes.

8Place the cookies on a baking tray lined with parchment paper.

9Bake in the preheated oven for 15-20 minutes or until the nankathis turn golden brown.

10Remove from the oven and let them cool completely before serving.
