Savory Tomato Onion Potato Bake

4In a small bowl, mix the dried oregano (1 teaspoon), dried thyme (1 teaspoon), garlic powder (1 teaspoon), and paprika (½ teaspoon).

5Drizzle olive oil (¼ cup) over the layered vegetables in the baking dish.

6Sprinkle the mixed herbs and spices over the vegetables.

7Cover the baking dish with aluminum foil and bake in the preheated oven for 40 minutes.

8Remove the foil, sprinkle grated Parmesan cheese (½ cup) over the top, and bake for an additional 15 minutes until the cheese is melted and bubbly.
