Crispy Cajun Catfish Fillets

1In a shallow dish, mix cornmeal (1 cup), flour, Cajun seasoning (2 tablespoons), garlic powder (1 teaspoon), onion powder (1 teaspoon), paprika (½ teaspoon), and cayenne pepper (½ teaspoon).

2In another dish, whisk together eggs (2) and milk (¼ cup).

3Dip each catfish fillet in the egg mixture, then coat with the cornmeal (1 cup) mixture, pressing gently to adhere the coating.

4Heat vegetable oil in a large skillet over medium-high heat.

5Fry the catfish fillets (4) for about 3-4 minutes per side or until golden brown and crispy, depending on the thickness of the fillets.

6Remove the fillets from the skillet and place them on a paper towel-lined plate to drain excess oil.

7Serve hot with your favorite side dishes like coleslaw, hush puppies, or fries.
