Spicy Tomato Egg Curry

1Boil the eggs (4), peel them, and set aside.

2Heat oil in a pan and add cumin seeds (1 teaspoon) and mustard seeds (½ teaspoon). Let them splutter.

3Add finely chopped onions and sauté until golden brown.

4Add minced garlic (3 cloves), ginger, and green chili (1). Cook until fragrant.

5Add chopped tomatoes (2) and cook until they soften and release their juices.

6Stir in turmeric powder (1 teaspoon), coriander powder (1 teaspoon), red chili powder (½ teaspoon), cumin powder (½ teaspoon), and garam masala (1 teaspoon). Mix well.

7Add a little water to create a thick curry base.

8Gently place the boiled eggs (4) into the curry, ensuring they are coated with the sauce.

9Simmer for a few minutes to allow the flavors to meld together.

10Garnish with fresh coriander leaves before serving.
