Mediterranean Pasta Salad with Creamy Pesto Dressing

1Cook the rice (1 cup), macaroni (1 cup), and spaghetti (1 cup) according to package instructions in separate pots.

2In a large mixing bowl, combine the cooked rice (1 cup), macaroni (1 cup), and spaghetti (1 cup).

3Add the tomato sauce (1 cup), pesto (½ cup), Greek yogurt (½ cup), cottage cheese (½ cup), grated parmesan (¼ cup), and balsamic glaze (2 tbsp) to the bowl. Mix well to combine all the ingredients.

4Dice the tomatoes (2) and onions, then add them to the bowl.

5Drizzle the hoisin sauce (2 tbsp) over the salad and mix everything together gently.

6Season with salt and pepper to taste.

7Garnish the salad with chopped parsley (¼ cup) and cilantro (¼ cup) before serving.
