PHILADELPHIA Classic Cheesecake

1.Preheat the oven to 325°F (160°C).

2.Mix graham cracker crumbs, 1/4 cup sugar, and melted butter; press onto the bottom of a 9-inch springform pan.

3.Beat cream cheese, 1 cup sugar, and vanilla extract in a large bowl with an electric mixer until well blended.

4.Add eggs, one at a time, mixing on low speed after each just until blended.

5.Pour over the crust.

6.Bake for 55 minutes or until the center is almost set.

7.Mix sour cream, 1/4 cup sugar, and flour until well blended.

8.Spread over the cheesecake.

9.Bake an additional 10 minutes.

10.Turn off the oven and leave the cheesecake in the oven for 2 hours.

11.Remove from the oven and run a knife around the rim of the pan to loosen the cake.

12.Refrigerate for 4 hours or overnight.
