Coconut Sugar Cookies

1Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.

2In a mixing bowl, cream together the butter (½ cup) and sugar (1 cup) until light and fluffy.

3Add the egg (1) and vanilla extract (1 tsp) to the butter (½ cup)-sugar (1 cup) mixture and mix well.

4In a separate bowl, combine the shredded coconut (1 cup), flour, and baking powder (½ tsp).

5Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.

6Roll the dough into small balls and place them on the prepared baking sheet.

7Flatten each ball slightly with a fork to create a crisscross pattern.

8Bake in the preheated oven for 10-12 minutes or until the edges are golden brown.

9Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
