Spicy Onion Curry for Fluffy Porota

1In a pan, heat vegetable oil (2 tablespoons) over medium heat and add cumin seeds (1 teaspoon). Let them splutter for a few seconds.

2Add sliced onions and sauté until they turn golden brown and caramelized, stirring occasionally.

3Add ginger paste (1 teaspoon), garlic paste (1 teaspoon), and green chilies (2). Cook for 2-3 minutes until the raw smell disappears.

4Stir in chopped tomatoes and cook until they soften and the oil starts to separate from the mixture.

5Add turmeric powder (1 teaspoon), coriander powder (1 teaspoon), garam masala (1 teaspoon), red chili powder (½ teaspoon), cumin powder (½ teaspoon), and sugar (½ teaspoon). Mix well to combine all the spices with the onion-tomato mixture.

6Pour in the yogurt (½ cup) and stir continuously to prevent curdling. Cook for another 5-7 minutes until the curry thickens and the oil floats on top.

7Garnish with fresh coriander leaves (¼ cup) and serve hot with fluffy porota or any flatbread of your choice.
