Lemon Vanilla Butter Cake

1Preheat the oven to 180°C (350°F) and grease a cake tin with butter and dust with flour.

2In a mixing bowl, cream the butter and caster sugar (120 g) until light and fluffy.

3Add the eggs (2) one at a time, beating well after each addition.

4Mix in the vanilla extract, lemon (1) zest, milk (30 g), and oil (10 g) until well combined.

5Sift the flour, baking powder (1½ tsp), and salt into the wet ingredients and fold gently until just combined.

6Pour the batter into the prepared cake tin and smooth the top with a spatula.

7Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.

8Remove the cake from the oven and let it cool in the tin for 10 minutes before transferring to a wire rack to cool completely.

9Dust the cooled cake with icing sugar before serving.
