Mediterranean Rice Salad with Greek Lemon Chicken and Herb Dressing

1Cook the whole grain rice (1 cup) according to package instructions and let it cool down.

2Chop the red and yellow bell peppers (2), red onion (1), cucumbers (2), and Kalamata olives (1 cup) into bite-sized pieces.
