Creamy Chicken and Shrimp Penne with Carrots

1Cook penne pasta (8 oz) according to package instructions. Drain and set aside.

2In a large skillet, heat olive oil (2 tbsp) over medium heat.

3Add diced chicken breast (1 lb) and cook until browned, about 5-7 minutes.

4Add shrimp (1 lb) to the skillet and cook until pink and opaque, about 2-3 minutes. Remove chicken and shrimp (1 lb) from the skillet and set aside.

5In the same skillet, add onion (1), garlic (3 cloves), and carrots (2). Cook until vegetables are tender, about 5 minutes.

6Return the chicken and shrimp (1 lb) to the skillet.

7Stir in chicken broth (1 cup), heavy cream (1 cup), paprika (1 tsp), thyme, salt, and pepper. Bring to a simmer and cook for 5 minutes.

8Add cooked penne pasta (8 oz) and Parmesan cheese to the skillet. Toss to combine.

9Cook for an additional 2-3 minutes until the sauce thickens.

10Garnish with chopped parsley before serving.
