Mediterranean Vegetable Rice Delight

1Rinse the rice (1 cup) under cold water until the water runs clear, then drain and set aside.

2In a large pot, heat the olive oil (2 tablespoons) over medium heat. Add the diced onion (1 large) and sauté for about 3-4 minutes until translucent.

3Add the minced garlic (2 cloves) and diced carrots (2 medium) to the pot, and continue to sauté for another 3-4 minutes until the carrots (2 medium) start to soften.

4Stir in the diced eggplant (1 medium) and corn, cooking for an additional 5 minutes until the eggplant (1 medium) is tender.

5Add the rinsed rice (1 cup) to the pot, stirring well to combine with the vegetables.

6Sprinkle in the paprika (1 teaspoon), cumin (1 teaspoon), oregano, salt, and pepper, mixing everything together thoroughly.

7Pour in the vegetable broth or water (2 cups), bringing the mixture to a boil.

8Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 15-20 minutes, or until the rice (1 cup) is cooked and has absorbed all the liquid.

9Remove the pot from heat and let it sit, covered, for an additional 5 minutes to allow the flavors to meld.
