Creamy Garlic Mashed Potatoes with Onion

1In a large pot, add the cubed potatoes (4 large) and cover them with water. Bring to a boil over medium-high heat and cook until the potatoes (4 large) are tender, about 15-20 minutes.

2While the potatoes (4 large) are cooking, heat a skillet over medium heat and add the butter (2 tablespoons). Once melted, add the chopped onion (1 medium) and sauté until translucent, about 5 minutes.

3Add the minced garlic (4 cloves) to the skillet and cook for an additional 1-2 minutes until fragrant. Remove from heat and set aside.

4Once the potatoes (4 large) are cooked, drain them and return them to the pot. Mash the potatoes (4 large) using a potato masher or fork until smooth.

5Pour in the milk (1 cup) and add the sautéed onion (1 medium) and garlic (4 cloves) mixture. Stir until well combined and creamy. Season with salt and pepper to taste.

6Serve hot, garnished with chopped parsley.
