Chewy Chocolate Oatmeal Cookies

1Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

2In a large mixing bowl, cream together the softened butter, brown sugar, (1 cup) and granulated sugar (½ cup) until light and fluffy, about 2-3 minutes.

3Add the eggs (2 large) one at a time, mixing well after each addition. Then, stir in the vanilla extract (2 teaspoons) until fully combined.

4In a separate bowl, whisk together the all-purpose flour (1½ cups), baking soda (1 teaspoon), and salt (½ teaspoon).

5Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.

6Fold in the rolled oats (1 cup) and semi-sweet chocolate chips (1½ cups) until evenly distributed throughout the dough.

7Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.

8Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden but the centers are still soft.

9Remove from the oven and let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
