World's Best Sausage Casserole

1Preheat your oven to 350°F (175°C).

2In a large skillet, heat the olive oil (1 tablespoon) over medium heat. Add the chopped onion (1 medium), bell pepper, (1) and minced garlic (2 cloves). Sauté until the vegetables are softened, about 5 minutes.

3Add the Italian sausage (1 pound) to the skillet, breaking it up with a spoon. Cook until browned and cooked through, about 7-10 minutes. Drain excess fat if necessary.

4Stir in the diced tomatoes (with juice), kidney beans, corn, oregano, basil, paprika (1 teaspoon), salt (½ teaspoon), and black pepper (¼ teaspoon). Mix well and let it simmer for about 5 minutes to combine the flavors.

5In a large mixing bowl, combine the cooked rice (1 cup) with the sausage and vegetable mixture. Stir until well combined.

6Transfer the mixture to a greased 9x13 inch baking dish. Spread it evenly.

7Sprinkle the shredded cheddar cheese (1 cup) on top of the casserole.

8Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Then remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.

9Remove from the oven and let it cool for a few minutes before serving.
