Fluffy Indian Pav Bread Rolls

1In a large mixing bowl, combine warm milk (1 cup), sugar (2 tablespoons), and instant yeast (2 teaspoons). Let it sit for about 5-10 minutes until frothy.

2Add melted butter, yogurt (¼ cup), salt (1 teaspoon), baking powder (½ teaspoon), and baking soda (¼ teaspoon) to the yeast mixture. Mix well.

3Gradually add all-purpose flour (3 cups) to the mixture, stirring until a dough forms.

4Knead the dough on a floured surface for about 10 minutes until smooth and elastic.

5Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1-2 hours or until doubled in size.

6Once risen, punch down the dough and divide it into equal portions (about 10-12). Shape each portion into a smooth ball.

7Place the dough balls in a greased baking dish, ensuring they are close but not touching. Cover and let them rise for another 30-45 minutes.

8Preheat the oven to 375°F (190°C).

9Brush the tops of the dough balls with milk for a golden finish.

10Bake in the preheated oven for 20-25 minutes or until the tops are golden brown and the rolls sound hollow when tapped.
