Creamy Citrus Tapioca Delight

1In a medium saucepan, bring 2 cups of water (2 cups) to a boil. Add the tapioca pearls (½ cup) and cook according to package instructions until they become translucent, usually about 15-20 minutes. Stir occasionally to prevent sticking.

2Once cooked, drain the tapioca pearls (½ cup) and rinse them under cold water (2 cups) to stop the cooking process. Set aside.

3In a mixing bowl, combine the curd (1 cup), sugar (½ cup), orange juice, and lemon juice. Whisk until smooth and the sugar (½ cup) is dissolved.

4Add the cooked tapioca pearls (½ cup) to the curd (1 cup) mixture and gently fold them in until well combined.

5Add the orange zest and mix gently to incorporate the flavor.

6Transfer the creamy tapioca mixture into serving bowls or glasses. Top with pomegranate seeds (½ cup) for a burst of color and flavor.

7Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld and the dessert to set.
