Homemade Alpha-Bits Cereal

1.Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

2.In a large mixing bowl, combine the all-purpose flour, cornmeal, sugar, baking powder, baking soda, and salt. Mix well to ensure all dry ingredients are evenly distributed.

3.Add the softened butter to the dry ingredients and mix until the mixture resembles coarse crumbs.

4.In a separate bowl, whisk together the milk, vanilla extract, almond extract, and honey until well combined.

5.Pour the wet ingredients into the dry ingredients and mix until a dough forms. If the dough is too sticky, add a little more flour until it is manageable.

6.Turn the dough out onto a lightly floured surface and roll it out to about 1/4 inch thick.

7.Using a small cookie cutter or knife, cut the dough into small letters or shapes, similar to the size of traditional Alpha-Bits cereal pieces.

8.Place the cut-out shapes onto the prepared baking sheet, leaving a little space between each piece.

9.Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Keep an eye on them to avoid over-baking.

10.Remove from the oven and let the cereal cool completely on the baking sheet before transferring to an airtight container.
