Caramelized Onion Tart with Herbed Goat Cheese

1Preheat your oven to 400°F (200°C).

2In a large skillet, heat the olive oil (2 tablespoons) and butter over medium heat. Add the sliced onions (2 large), sugar (1 teaspoon), salt (1 teaspoon), and pepper. Stir to combine.

3Cook the onions (2 large) for about 15-20 minutes, stirring occasionally, until they are soft and caramelized. Add the thyme and rosemary, and cook for an additional 2 minutes. Remove from heat and let cool slightly.

4On a lightly floured surface, roll out the puff pastry sheet to fit your tart pan. Place the pastry in the pan and trim any excess.

5In a bowl, mix the softened goat cheese (4 ounces) and heavy cream (¼ cup) until smooth. Spread this mixture evenly over the bottom of the pastry.

6Top the goat cheese (4 ounces) mixture with the caramelized onions (2 large), spreading them out evenly.

7Brush the edges of the pastry with the beaten egg (1) for a golden finish.

8Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and puffed up.

9Remove from the oven and let cool for a few minutes before slicing and serving.
