Zesty Lime Chicken Drumsticks with Peas and Couscous

1Preheat your oven to 400°F (200°C).

2In a large bowl, combine the chicken drumsticks (8) with olive oil (2 tablespoons), minced garlic (2 cloves), lime zest, lime juice, cumin (1 teaspoon), paprika (1 teaspoon), salt, and pepper. Toss well to coat the chicken evenly with the marinade. Let it marinate for at least 30 minutes, or up to 2 hours in the refrigerator for more flavor.

3While the chicken is marinating, prepare the couscous (1 cup). In a saucepan, bring 2 cups of chicken broth (2 cups) (or water) to a boil. Once boiling, remove from heat and stir in the couscous (1 cup). Cover and let it sit for about 5 minutes until the couscous (1 cup) absorbs the liquid. Fluff with a fork and set aside.

4In a skillet over medium heat, add a little olive oil (2 tablespoons) and sauté the chopped shallots (2) until they are translucent, about 3-4 minutes. Add the peas and cook for another 2-3 minutes until heated through. Season with salt and pepper to taste.

5Place the marinated chicken drumsticks (8) on a baking sheet lined with parchment paper. Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the skin is crispy, turning halfway through the cooking time.

6Once the chicken is done, serve it over a bed of couscous (1 cup), topped with the sautéed peas and shallots (2). Garnish with additional lime wedges if desired.
