Tropical Fruit Salad with Honey-Lime Dressing

1In a large mixing bowl, combine the diced pineapple (2 cups), mango, strawberries, kiwi, watermelon, and blueberries (1 cup).

2In a separate small bowl, whisk together the honey (¼ cup), lime juice (¼ cup), and lime zest (1 teaspoon) until well combined.

3Pour the honey (¼ cup)-lime dressing over the mixed fruits and gently toss to coat all the fruit evenly.

4Add the chopped mint leaves to the fruit salad and toss lightly to incorporate the mint flavor.

5Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld together.

6Serve chilled in individual bowls or on a large platter, garnished with additional mint leaves if desired.
