Sweet and Savory Chicken Stir-Fry

1In a large bowl, combine the sliced chicken breasts (2) with soy sauce (3 tablespoons), sugar (1 tablespoon), brown sugar (1 tablespoon), and a pinch of salt. Mix well and let it marinate for at least 15 minutes.

2Heat a large skillet or wok over medium-high heat and add a splash of oil.

3Once the oil is hot, add the marinated chicken to the skillet. Stir-fry for about 5-7 minutes until the chicken is cooked through and slightly caramelized.

4Add the sliced onion (1) and capsicum to the skillet. Stir-fry for an additional 3-4 minutes until the vegetables are tender but still crisp.

5Pour in the tomato ketchup (2 tablespoons) and stir well to combine all the ingredients. Cook for another 2 minutes to heat through.

6Taste and adjust seasoning with more salt if needed. Serve hot over rice or noodles.
