Banana Pecan Butterscotch Cookies

1Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

2In a large mixing bowl, cream together the softened butter, brown sugar, (1 cup) and granulated sugar (½ cup) until light and fluffy.

3Add the mashed bananas, egg (1 large), and vanilla extract (1 teaspoon) to the butter mixture, and mix until well combined.

4In a separate bowl, whisk together the all-purpose flour (2 cups), baking soda (1 teaspoon), and salt (½ teaspoon).

5Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

6Fold in the butterscotch chips (1 cup) and chopped pecans (1 cup) until evenly distributed throughout the dough.

7Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, leaving space between each cookie.

8Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the centers are set.

9Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
