Lemon Cheesecake Delight

1Preheat your oven to 325°F (160°C).

2In a medium bowl, combine the graham cracker crumbs (2 cups) and melted butter. Mix until the crumbs are evenly coated. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.

3In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add the granulated sugar (1 cup) and continue to beat until well combined.

4Add the sour cream (1 cup), flour, eggs (4 large), lemon juice, lemon zest (1 tablespoon), vanilla extract (1 teaspoon), and salt (¼ teaspoon) to the cream cheese mixture. Beat on low speed until just combined, being careful not to overmix.

5Pour the cheesecake filling over the cooled crust in the springform pan. Smooth the top with a spatula.

6Bake in the preheated oven for 50-60 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.

7Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours, or overnight for best results.

8Before serving, you can garnish with additional lemon zest (1 tablespoon) or whipped cream if desired. Carefully remove the sides of the springform pan and slice the cheesecake into wedges.
