Creamy Basil Pasta with Spicy Chilli and Caramelized Onions

1Cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside, reserving a cup of pasta water.

2In a large skillet, heat the olive oil (2 tablespoons) over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, about 15-20 minutes.

3Add the minced garlic (2 cloves) and chopped chillies to the skillet with the onions. Sauté for an additional 2-3 minutes until fragrant.

4Pour in the heavy cream (200 ml) and bring to a gentle simmer. Stir in the chopped basil and season with salt and black pepper to taste. Let it cook for 2-3 minutes until the sauce thickens slightly.

5Add the cooked pasta to the skillet, tossing to coat the pasta evenly with the creamy sauce. If the sauce is too thick, add a little reserved pasta water to reach the desired consistency.

6Serve the pasta hot, garnished with grated Parmesan cheese and additional fresh basil (1 cup) if desired.
